Crystal starts each one the slow way: butter and sugar creamed by hand, batter folded in small batches, buttercream whipped fresh and tinted to order. The tiers are filled, stacked and finished for a single date — the day you actually need it — and not a day sooner.
That's the trade. A made-to-order kitchen can't keep a wall of finished cakes ready to grab, so the calendar fills the way a good restaurant's tables do. Regulars learned long ago to call ahead — and the cakes are worth the place in line.
