Cheese is a landscape you can taste. Before it is a wedge under glass, it is weather: a particular slope, a particular grass, a particular animal that walked there. A wheel is a record of all of it — pressed, salted, and left to keep its own slow counsel in the dark. To stand at a good counter is to stand in front of a dozen small geographies at once.

This page is a documentary in miniature — an unofficial love letter to a neighbourhood shop, organised the way the cheese itself is: by milk, by age, by region. Read it slowly. The wheels did not hurry, and neither should you.
