Elmo Baking Co. is a small craft-pastry bakery on Murray Street — almond croissants, laminated viennoiserie, and choux piped to order. Light, barely-sweet, and made only four days a week.

How a cream puff gets made.

Choux is the trick pastry — cooked twice, once on the stove and once in the oven, so it puffs into a hollow shell. Then it’s piped full. Watch the swirl fill in.

Crisp shell, soft centre.

1Cook the paste, then pipe little mounds.
2Bake until they puff hollow and crisp.
3Fill to order with barely-sweet cream.
4A snow of sugar, and that’s it.
