There is a kind of pastry that cannot be hurried, and a kind of bakery that decides not to try. Elmo Baking Co. opens Thursday and closes after Sunday — four days on Murray Street, then quiet again while the next week’s dough is folded, rested, and folded once more. The limited week is not a gimmick. It is the schedule that laminated pastry actually keeps: butter, time, cold, and patience, in that order.
So the weekend becomes the event. Regulars learn the rhythm — the almond croissants that go first, the cream puffs piped to order, the trays that come out warm and do not come back. A newer name on the Port Moody pastry map, but already the kind of place people plan a Saturday morning around.
