Elmo Baking Co. is a young craft-pastry bakery on Murray Street in Port Moody — almond croissants, hand-piped cream puffs, and laminated dough made the slow way, four days a week.  Chapter One · Four Days

Some bakeries open every day.
This one keeps only four.

There is a kind of pastry that cannot be hurried, and a kind of bakery that decides not to try. Elmo Baking Co. opens Thursday and closes after Sunday — four days on Murray Street, then quiet again while the next week’s dough is folded, rested, and folded once more. The limited week is not a gimmick. It is the schedule that laminated pastry actually keeps: butter, time, cold, and patience, in that order.

So the weekend becomes the event. Regulars learn the rhythm — the almond croissants that go first, the cream puffs piped to order, the trays that come out warm and do not come back. A newer name on the Port Moody pastry map, but already the kind of place people plan a Saturday morning around.

Butter, time, and cold. Skip any one of the three and the layers simply will not happen.

Chapter Two · The Lamination

Two hundred and fifty layers, roughly.

A croissant is a stack of butter and dough folded over itself until the count runs into the hundreds — each layer steaming into the next in the oven, lifting the whole thing into something that shatters when you bite it. The almond version goes further: baked, split, soaked, filled with frangipane, dusted, and baked again. Below, a few of the things that come out of that process. Photographs are stock placeholders; the bakery would supply its own.
