How we make it

Three steps, one comal.

Press the masa

Corn masa filled with cheese, beans, or pork โ€” patted round and even by hand, to order.

ii.

Onto the comal

Griddled hot until the surface blisters golden and the filling melts through.

Curtido & salsa

Finished with tangy cabbage curtido and a spoon of salsa roja. Eaten with your hands.
