Edgemont Gourmet Meats is a neighbourhood butcher in the heart of Edgemont Village. The block gets scrubbed, the knives come down, and the cuts get laid out before the first customer turns the corner.
Everything is cut, trimmed and tied by hand, to order. We dry-age our own beef, make charcuterie and sausage on the premises, and waste nothing.
If you're cooking something particular — ask. The answer is usually "yes, and here's how I'd cut it."
