The Bakehouse in Dundarave is a small bakery and cafe on Marine Drive that opens at eight, fills its case with the day's bread and pastry, and closes the moment it's spent — never later than three. Chapter One · The Open

It begins in the dark, hours before anyone knocks.

There is a version of Marine Drive that almost nobody sees — the one at half past five, when the shops are shuttered and the only warm window on the block belongs to a bakery. Inside, doughs folded the day before have come out to proof, the ovens are climbing to heat, and flour hangs in the lamp-light. By the time the door is unlocked at eight, the work that fills the case has already been done.

This is the quiet logic of a bakehouse. The morning customer arrives to a finished thing — a loaf with a crackling crust, a croissant still warm at the centre — without ever seeing the long, dark hours that made it. The eight o'clock door is not the start of the day. It's the moment the day is handed over.
